1. Slice tomatoes of different colors and plate them in a mosaic pattern. Add mozzarella cheese slices and basil leaves. Serve with balsamic vinegar.
2. Slice firm tomatoes and lightly cover them in Japanese-style bread crumbs and fry them. Frying brings up the sugar content of tomatoes.
3. Cut tomatoes in chunks, add scallions, cilantro and lime juice to make salsa.
4. Make sauce with ripened tomatoes and store them for later use.
5. Just slice them and eat them fresh.
