Kids: Make Mom a treat that's easy as pie!

Have an adult (Dad) prepare the pudding and let the kids assemble the tarts, the best part is surprising Mom with a homemade treat, she'll love, to celebrate Mother's Day.

INGREDIENTS

2 packages mini phyllo shells

1 package Durkee Lemon Flavor Pie Filling (I chose Durkee because it calls for only one egg and contains no additives).

1 can Cabot natural whipped cream

PREPARE

Preheat oven to 350° F.

Lightly beat together 1 egg and 2 1/2 cups spring water, add to a medium sauce pan. Combine with filling mix and 3 tablespoons of sugar, stirring until smooth. Cook over medium heat, stirring constantly until pudding comes to a boil, approximately 2 minutes. Remove from heat, pudding will thicken while cooling. Line a baking sheet with wax paper and place shells on it. Using a scoop, fill each shell with 1 tablespoon of pudding; then chill. Before serving, transfer tarts to a pretty dish, give each a tiny squirt of whipped cream; serve.
