This is a popular Mediterranean dish -- sautéed chard flavored with rich bacon, shallots, garlic and walnuts. Swiss chard with shallots, bacon and walnuts

6 servings

2 strips thick cut bacon, no nitrates

1 tablespoon extra-virgin olive oil

1 medium shallot (1/4 cup), finely minced

1 large clove garlic, finely minced

1 cup organic white button mushrooms, wash well and slice

1 large bunch of fresh organic Swiss red chard, rinsed stems and leaves separated, sliced

2 tablespoons fresh lemon juice

2-3 whole walnuts, chopped

Sea salt, freshly ground pepper

1. In a Dutch oven over medium heat, cook bacon, stirring, until it begins to brown, about 5 minutes. Transfer using a slotted spoon to paper towel-lined plate.

2. Drain the bacon grease out of the pan, give the pan a wipe with a paper towel and drizzle olive oil, add shallot, garlic and mushrooms, stirring until shallot and garlic are golden, about 2-3 minutes. Add chard stems and leaves, lemon juice and cook, stirring until wilted, 3-4 minutes. Cover and cook until stems are tender, 4-5 minutes more. Remove from heat, sprinkle with bacon and walnuts. Add salt and pepper after plated.
